Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin with butter or cooking spray.
Prepare the Bacon: Cook the bacon in a skillet until crispy. Once cooked, place it on a paper towel to absorb the excess grease, then crumble it into small pieces.
Mix Dry Ingredients: In a medium-sized bowl, whisk together the flour, sugar, baking powder, and salt.
Combine Wet Ingredients: In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; the batter will be slightly lumpy.
Add Bacon: Gently fold the crumbled bacon into the pancake batter.
Fill the Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup about 3/4 full.
Bake: Bake for 10-12 minutes or until the pancake bites are golden brown and a toothpick inserted into the center comes out clean.
Serve: Once the pancake bites are baked, remove them from the oven and let them cool for a couple of minutes. Drizzle with maple syrup before serving.
