Instructions
- Prepare the Potatoes
- Mash the boiled potatoes in a large mixing bowl until smooth.
- Add shredded cheddar cheese, crumbled bacon, sour cream, green onions, salt, and pepper. Mix well.
- Form the Bites
- Shape the potato mixture into small bite-sized balls.
- Coat the Bites
- Roll each potato ball in flour, then dip it into the beaten egg, and finally coat with breadcrumbs.
- Fry Until Golden
- Heat oil in a deep skillet over medium heat.
- Fry the coated potato bites in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove and place on a paper towel-lined plate to drain excess oil.
- Serve Hot
- Serve immediately with your favorite dipping sauce, such as ranch, sour cream, or spicy mayo.
