Loaded Potato Bites

Instructions

  1. Prepare the Potatoes
    • Mash the boiled potatoes in a large mixing bowl until smooth.
    • Add shredded cheddar cheese, crumbled bacon, sour cream, green onions, salt, and pepper. Mix well.
  2. Form the Bites
    • Shape the potato mixture into small bite-sized balls.
  3. Coat the Bites
    • Roll each potato ball in flour, then dip it into the beaten egg, and finally coat with breadcrumbs.
  4. Fry Until Golden
    • Heat oil in a deep skillet over medium heat.
    • Fry the coated potato bites in batches until golden brown and crispy, about 2-3 minutes per batch.
    • Remove and place on a paper towel-lined plate to drain excess oil.
  5. Serve Hot
    • Serve immediately with your favorite dipping sauce, such as ranch, sour cream, or spicy mayo.
