Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it for easy cleanup.
2. Prepare the Carrots:
Peel the carrots and cut them into uniform sticks (about 2-3 inches long). If using baby carrots, you can leave them whole.
3. Make the Honey Garlic Butter Sauce:
In a small bowl, whisk together the melted butter, honey, minced garlic, olive oil, salt, and pepper until the mixture is well combined.
4. Toss the Carrots:
Place the prepared carrots on the baking sheet in a single layer.
Drizzle the honey garlic butter mixture over the carrots and toss to coat evenly. Make sure each carrot is coated with the glaze.
5. Roast the Carrots:
Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and lightly caramelized, stirring halfway through to ensure even roasting.
If you want a bit of extra color, you can broil them for the last 2-3 minutes (watch them closely to avoid burning).
6. Serve:
Once the carrots are roasted, remove them from the oven and sprinkle with freshly chopped parsley or thyme for a pop of color and flavor (optional).
Serve hot as a side dish to your favorite main courses.
