Instructions:
- Prepare the Cucumber:
- Wash the cucumber and slice it thinly using a sharp knife or mandolin. If the skin is thick or waxy, you can peel the cucumber, but it’s optional.
- Place the cucumber slices on a paper towel or clean kitchen towel to absorb any excess moisture. This helps prevent the bread from getting soggy.
- Prepare the Spread:
- In a small bowl, combine the softened cream cheese and mayonnaise (if using). Mix well until smooth and creamy.
- Add salt, pepper, and lemon juice to taste. If you’re using fresh herbs, you can chop them finely and add them to the spread for extra flavor.
- Assemble the Sandwich:
- Spread a generous layer of the cream cheese mixture on each slice of bread.
- Layer the cucumber slices evenly on one slice of bread. You can overlap the slices slightly to ensure the sandwich is well-covered.
- Top with another slice of bread, spread side down.
- Cut and Serve:
- For a neat presentation, trim the crusts off the bread and cut the sandwich into halves or quarters, either diagonally or into small squares.
- Garnish with fresh herbs like dill or chives if desired.
