Cucumber Sandwich

Instructions:

  1. Prepare the Cucumber:
    • Wash the cucumber and slice it thinly using a sharp knife or mandolin. If the skin is thick or waxy, you can peel the cucumber, but it’s optional.
    • Place the cucumber slices on a paper towel or clean kitchen towel to absorb any excess moisture. This helps prevent the bread from getting soggy.
  2. Prepare the Spread:
    • In a small bowl, combine the softened cream cheese and mayonnaise (if using). Mix well until smooth and creamy.
    • Add salt, pepper, and lemon juice to taste. If you’re using fresh herbs, you can chop them finely and add them to the spread for extra flavor.
  3. Assemble the Sandwich:
    • Spread a generous layer of the cream cheese mixture on each slice of bread.
    • Layer the cucumber slices evenly on one slice of bread. You can overlap the slices slightly to ensure the sandwich is well-covered.
    • Top with another slice of bread, spread side down.
  4. Cut and Serve:
    • For a neat presentation, trim the crusts off the bread and cut the sandwich into halves or quarters, either diagonally or into small squares.
    • Garnish with fresh herbs like dill or chives if desired.
