In a skillet over medium heat, cook the ground beef until it’s browned, breaking it up into small pieces as it cooks. Drain any excess fat.
Season the Beef:
Add the taco seasoning to the beef along with a splash of water (about 1/4 cup, or as directed on the seasoning packet). Stir to combine and cook for another 2-3 minutes, allowing the seasoning to fully incorporate into the beef. Remove from heat and set aside.
Prepare the Cream Cheese Layer:
In a medium bowl, combine the softened cream cheese and sour cream. Mix well until smooth and creamy. If the cream cheese is hard to mix, you can microwave it for 15-20 seconds to soften it further.
Assemble the Dip:
In a 9×9-inch baking dish (or a similar size casserole dish), spread the cream cheese mixture evenly on the bottom of the dish.
Layer the seasoned ground beef mixture on top of the cream cheese layer.
Spoon the salsa evenly over the beef layer.
Sprinkle the diced green chilies over the salsa.
Add the Cheese:
Top with a mixture of shredded cheddar and Mexican blend cheeses, spreading them evenly over the top.
Bake the Dip:
Preheat the oven to 375°F (190°C).
Bake the dip for 15-20 minutes, or until the cheese is fully melted and bubbly.
Garnish and Serve:
Once out of the oven, top the dip with sliced jalapeños, black olives, and chopped green onions (if using).
Serve hot with tortilla chips, tortilla scoops, or fresh veggies like carrots and celery for dipping.
