Snickerdoodle Cobbler

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish or similar-sized baking pan with butter or non-stick cooking spray.
  2. Make the Cobbler Batter:
    • In a medium mixing bowl, whisk together the flour, baking powder, salt, granulated sugar, and cinnamon.
    • Stir in the melted butter, milk, and vanilla extract until just combined. The batter will be thick, like a cookie dough.
  3. Prepare the Topping:
    • In a small bowl, combine the 1/4 cup of granulated sugar and 1 tablespoon of cinnamon to make the snickerdoodle topping.
  4. Assemble the Cobbler:
    • Spoon the batter into the prepared baking dish, spreading it out evenly.
    • Sprinkle the snickerdoodle cinnamon-sugar mixture over the top of the batter.
  5. Make the Sauce:
    • In a small saucepan, combine the hot water and brown sugar over medium heat. Stir until the brown sugar is completely dissolved.
    • Pour the hot sugar-water mixture over the batter and cinnamon-sugar topping in the baking dish. Don’t stir; the liquid will create the gooey, syrupy layer as it bakes.
  6. Bake the Cobbler:
    • Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the cobbler is golden on top and a toothpick inserted into the center comes out clean (though there will be some syrup underneath).
  7. Serve:
    • Allow the cobbler to cool slightly before serving. It will be very gooey and saucy—serve it with a spoon to get all the delicious layers.
    • Optional: Serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence!
