Preheat your oven to 350°F (175°C). Grease a 9-inch square baking dish or similar-sized baking pan with butter or non-stick cooking spray.
Make the Cobbler Batter:
In a medium mixing bowl, whisk together the flour, baking powder, salt, granulated sugar, and cinnamon.
Stir in the melted butter, milk, and vanilla extract until just combined. The batter will be thick, like a cookie dough.
Prepare the Topping:
In a small bowl, combine the 1/4 cup of granulated sugar and 1 tablespoon of cinnamon to make the snickerdoodle topping.
Assemble the Cobbler:
Spoon the batter into the prepared baking dish, spreading it out evenly.
Sprinkle the snickerdoodle cinnamon-sugar mixture over the top of the batter.
Make the Sauce:
In a small saucepan, combine the hot water and brown sugar over medium heat. Stir until the brown sugar is completely dissolved.
Pour the hot sugar-water mixture over the batter and cinnamon-sugar topping in the baking dish. Don’t stir; the liquid will create the gooey, syrupy layer as it bakes.
Bake the Cobbler:
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the cobbler is golden on top and a toothpick inserted into the center comes out clean (though there will be some syrup underneath).
Serve:
Allow the cobbler to cool slightly before serving. It will be very gooey and saucy—serve it with a spoon to get all the delicious layers.
Optional: Serve with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence!
