Smoked Brisket Grilled Cheese

Instructions:

1. Prepare the Brisket:

  • If you have leftover smoked brisket, slice or chop it into smaller pieces, making it easier to fit inside the sandwich.
  • If you’re using BBQ sauce, toss the brisket with a small amount of sauce to add moisture and flavor (this is optional).

2. Butter the Bread:

  • Spread a thin, even layer of butter on one side of each slice of bread. This will give the sandwich that perfect crispy, golden crust as it grills.

3. Assemble the Sandwich:

  • Place one slice of cheese on the non-buttered side of one piece of bread.
  • Layer on the smoked brisket, making sure it’s evenly distributed.
  • Add the second slice of cheese on top of the brisket. If you’re using BBQ sauce, you can drizzle a little bit on top of the brisket before adding the cheese.
  • Top with the second slice of bread, buttered side facing out.

4. Grill the Sandwich:

  • Heat a large skillet or griddle over medium heat.
  • Place the sandwich in the skillet and cook for 3-4 minutes, pressing gently with a spatula, until the bottom is golden brown and crispy.
  • Flip the sandwich and cook the other side for another 3-4 minutes, until both sides are golden brown and the cheese has fully melted.

5. Serve:

  • Remove the sandwich from the skillet and let it cool for a minute before slicing it in half.
  • Optionally, serve with pickled jalapeños, onions, or extra BBQ sauce on the side for dipping.
