Pizza Quesadillas

Instructions:

1. Prepare the Filling:

  • In a small bowl, combine the mozzarella cheese, dried oregano, garlic powder, and red pepper flakes (if using). Mix them together for an even distribution of seasonings.

2. Assemble the Quesadillas:

  • Lay one tortilla flat on a clean surface. Spread a tablespoon of marinara or pizza sauce evenly over the tortilla, leaving a small border around the edges.
  • Sprinkle half of the cheese mixture on top of the sauce.
  • Add a layer of your desired pizza toppings, such as pepperoni, sausage, or vegetables.
  • Sprinkle the remaining cheese mixture on top of the toppings.
  • Place another tortilla on top, pressing down gently to seal the quesadilla.

3. Cook the Quesadillas:

  • Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
  • Once the skillet is hot, add the assembled quesadilla to the pan. Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and crispy.
  • Flip the quesadilla carefully with a spatula and cook the other side for an additional 3-4 minutes, until golden brown and the cheese is melted inside.

4. Slice and Serve:

  • Remove the quesadilla from the pan and let it cool for a minute before slicing into wedges.
  • Garnish with fresh basil or parsley, if desired, and serve with extra pizza sauce or ranch dressing for dipping.
