In a small bowl, combine the mozzarella cheese, dried oregano, garlic powder, and red pepper flakes (if using). Mix them together for an even distribution of seasonings.
2. Assemble the Quesadillas:
Lay one tortilla flat on a clean surface. Spread a tablespoon of marinara or pizza sauce evenly over the tortilla, leaving a small border around the edges.
Sprinkle half of the cheese mixture on top of the sauce.
Add a layer of your desired pizza toppings, such as pepperoni, sausage, or vegetables.
Sprinkle the remaining cheese mixture on top of the toppings.
Place another tortilla on top, pressing down gently to seal the quesadilla.
3. Cook the Quesadillas:
Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat.
Once the skillet is hot, add the assembled quesadilla to the pan. Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and crispy.
Flip the quesadilla carefully with a spatula and cook the other side for an additional 3-4 minutes, until golden brown and the cheese is melted inside.
4. Slice and Serve:
Remove the quesadilla from the pan and let it cool for a minute before slicing into wedges.
Garnish with fresh basil or parsley, if desired, and serve with extra pizza sauce or ranch dressing for dipping.
