Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Make the Dough: In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until well combined and smooth.
Form the Dough Balls: Roll the dough into 1-inch balls. Then, roll each dough ball in additional granulated sugar to coat the outside. Place the dough balls about 2 inches apart on the prepared baking sheet.
Bake the Cookies: Bake for 8-10 minutes, or until the edges of the cookies are lightly golden. Keep an eye on them, as they can overbake quickly.
Add the Hershey’s Kisses: As soon as the cookies are done baking, remove them from the oven and press a Hershey’s Kiss into the center of each cookie. The cookie will flatten slightly as you do this.
Cool and Serve: Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.
