Oatmeal Scotchies Cookies

Instructions

  1. Preheat Oven
    • Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them.
  2. Cream Butter and Sugars
    • In a large bowl, beat the butter, granulated sugar, and brown sugar until creamy and smooth.
  3. Add Eggs and Vanilla
    • Beat in the eggs one at a time, followed by the vanilla extract. Mix until fully incorporated.
  4. Combine Dry Ingredients
    • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet mixture, beating until well combined.
  5. Add Oats and Butterscotch Chips
    • Stir in the oats and butterscotch chips until evenly distributed throughout the dough.
  6. Scoop and Shape
    • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake
    • Bake in the preheated oven for 7-9 minutes, or until the edges are golden brown. The centers may still look slightly soft, which is fine.
  8. Cool
    • Allow the cookies to cool on the baking sheets for 2 minutes before transferring them to wire racks to cool completely.
