Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or lightly grease them.
Cream Butter and Sugars
In a large bowl, beat the butter, granulated sugar, and brown sugar until creamy and smooth.
Add Eggs and Vanilla
Beat in the eggs one at a time, followed by the vanilla extract. Mix until fully incorporated.
Combine Dry Ingredients
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this dry mixture to the wet mixture, beating until well combined.
Add Oats and Butterscotch Chips
Stir in the oats and butterscotch chips until evenly distributed throughout the dough.
Scoop and Shape
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake
Bake in the preheated oven for 7-9 minutes, or until the edges are golden brown. The centers may still look slightly soft, which is fine.
Cool
Allow the cookies to cool on the baking sheets for 2 minutes before transferring them to wire racks to cool completely.
