2. Prepare the Muffin Batter:
In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
In another bowl, whisk together the milk, melted butter, egg, and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Spoon the batter into the mini muffin tin, filling each cup about 3/4 of the way full.
