Mini muffins that taste like donuts

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners.

2. Prepare the Muffin Batter:

  • In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk together the milk, melted butter, egg, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

3. Fill the Muffin Tin:

  • Spoon the batter into the mini muffin tin, filling each cup about 3/4 of the way full.

4. Bake the Muffins:

  • Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean and the muffins are lightly golden on top.
  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack.

5. Coat with Cinnamon-Sugar:

  • While the muffins are cooling, melt the remaining butter in a small bowl.
  • In a separate small bowl, mix together the sugar and cinnamon for the coating.
  • Once the muffins have cooled slightly but are still warm, dip each muffin into the melted butter, then roll it in the cinnamon-sugar mixture to coat it thoroughly.

6. Serve and Enjoy:

  • Let the coated muffins cool completely or serve them while they’re still warm. They’re perfect with a cup of coffee or as an afternoon snack!
