Mexican Pizza

Instructions:

1. Prepare the tortillas:

  • Heat a skillet over medium heat and lightly coat with olive oil or cooking spray.
  • Fry the flour tortillas for 1-2 minutes on each side, until golden brown and crispy. You can also bake them in the oven at 400°F (200°C) for 6-8 minutes, flipping halfway through for a healthier option. Set aside.

2. Cook the ground beef:

  • In the same skillet, cook the ground beef over medium heat, breaking it apart with a spoon, until browned and fully cooked (about 6-8 minutes).
  • Drain any excess fat, then add the taco seasoning and a bit of water (follow the seasoning packet’s instructions). Simmer for 5 minutes, allowing the flavors to meld together.

3. Assemble the Mexican pizza:

  • Spread a layer of refried beans over one of the crispy tortillas.
  • Add the cooked ground beef over the beans.
  • Spoon some salsa over the beef, then sprinkle with cheddar and mozzarella cheese.
  • Place the second tortilla on top to form the pizza.

4. Cook the Mexican pizza:

  • Heat the assembled pizza in the skillet over medium heat for 2-3 minutes to melt the cheese and warm the toppings.
  • Alternatively, bake in the oven at 400°F (200°C) for 5-7 minutes, until the cheese is melted and bubbly.

5. Garnish and serve:

  • Once the cheese is melted, remove from heat.
  • Top with chopped green onions, jalapeños, and a dollop of sour cream for added flavor.
  • Slice into wedges and enjoy!
