Heat a skillet over medium heat and lightly coat with olive oil or cooking spray.
Fry the flour tortillas for 1-2 minutes on each side, until golden brown and crispy. You can also bake them in the oven at 400°F (200°C) for 6-8 minutes, flipping halfway through for a healthier option. Set aside.
2. Cook the ground beef:
In the same skillet, cook the ground beef over medium heat, breaking it apart with a spoon, until browned and fully cooked (about 6-8 minutes).
Drain any excess fat, then add the taco seasoning and a bit of water (follow the seasoning packet’s instructions). Simmer for 5 minutes, allowing the flavors to meld together.
3. Assemble the Mexican pizza:
Spread a layer of refried beans over one of the crispy tortillas.
Add the cooked ground beef over the beans.
Spoon some salsa over the beef, then sprinkle with cheddar and mozzarella cheese.
Place the second tortilla on top to form the pizza.
4. Cook the Mexican pizza:
Heat the assembled pizza in the skillet over medium heat for 2-3 minutes to melt the cheese and warm the toppings.
Alternatively, bake in the oven at 400°F (200°C) for 5-7 minutes, until the cheese is melted and bubbly.
5. Garnish and serve:
Once the cheese is melted, remove from heat.
Top with chopped green onions, jalapeños, and a dollop of sour cream for added flavor.
