If using frozen shrimp, thaw them completely and pat them dry with paper towels. This is important to ensure they grill properly and don’t become watery.
Make the Marinade:
In a large bowl, combine olive oil, Cajun seasoning, garlic powder, paprika, onion powder, dried thyme, lemon juice, lemon zest, honey (if using), and a pinch of salt and pepper. Stir well to combine all ingredients.
Marinate the Shrimp:
Add the shrimp to the bowl with the marinade. Toss to coat the shrimp evenly with the seasoning. Cover the bowl and refrigerate for at least 15 minutes, up to 30 minutes. This helps the shrimp absorb the flavors of the marinade.
Preheat the Grill:
Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
Grill the Shrimp:
Once the grill is hot, thread the shrimp onto skewers (if using wooden skewers, soak them in water for 10 minutes to prevent burning). Alternatively, you can grill the shrimp directly on the grill or use a grill basket.
