Instructions:
- Prepare the Noodles:
- Boil a pot of water and cook the Pancit Canton noodles according to the package instructions (usually around 3-4 minutes). Drain and set aside. You can rinse them briefly in cold water to prevent sticking.
- Cook the Meat and Shrimp:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the chicken and pork strips and cook until browned and cooked through, about 5-7 minutes.
- Add the shrimp and cook for 2-3 minutes until they turn pink. Remove the meat and shrimp from the pan and set aside.
- Sauté the Vegetables:
- In the same skillet or wok, add the remaining 1 tablespoon of oil. Sauté the onions and garlic until fragrant and softened, about 2 minutes.
- Add the carrots, green beans, and red bell pepper. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
- Add the cabbage and cook for another 2 minutes, just until the cabbage wilts.
- Combine the Noodles:
- Return the cooked chicken, pork, and shrimp to the pan. Add the cooked noodles, soy sauce, oyster sauce, fish sauce (if using), and chicken broth. Toss everything together to coat the noodles with the sauces and mix the ingredients evenly.
- Let everything cook together for about 5 minutes, allowing the flavors to meld. If the noodles seem dry, add a little more chicken broth or water to keep it moist.
- Season and Taste:
- Taste the dish and adjust the seasoning with salt, pepper, or additional soy sauce to your preference.
- Garnish and Serve:
- Transfer the Pancit Canton to a serving platter. Top with sliced hard-boiled eggs, chopped green onions, and fried garlic, if desired. Serve with calamansi or lime wedges on the side for added freshness.
