Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
2. Make the Meatloaf Mixture:
In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, thyme (if using), salt, and pepper. Mix gently with your hands or a spoon until everything is well combined, but be careful not to overwork the meat.
3. Shape the Meatloaf:
Place half of the meat mixture into the prepared loaf pan, pressing it down gently to form the bottom layer.
Layer the deli ham slices over the meat mixture, followed by a layer of Swiss cheese. If you’re using shredded Swiss cheese, spread it evenly over the ham.
Top with the remaining meat mixture, pressing it down to fully cover the cheese and ham layers.
4. Bake the Meatloaf:
Place the loaf pan in the preheated oven and bake for 40-45 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
While the meatloaf is baking, prepare the glaze.
5. Make the Glaze:
In a small bowl, whisk together the Dijon mustard, honey, and mayonnaise (if using) until smooth and well combined. Set aside.
6. Glaze and Finish Baking:
After 40-45 minutes of baking, remove the meatloaf from the oven. Brush the top of the meatloaf with the honey Dijon glaze and return it to the oven for an additional 5-10 minutes, until the glaze is slightly caramelized and bubbly.
7. Serve:
Once done, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
Serve with additional glaze on the side, and enjoy with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad
