Chicken Cordon Bleu Meatloaf Recipe

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

2. Make the Meatloaf Mixture:

  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, thyme (if using), salt, and pepper. Mix gently with your hands or a spoon until everything is well combined, but be careful not to overwork the meat.

3. Shape the Meatloaf:

  • Place half of the meat mixture into the prepared loaf pan, pressing it down gently to form the bottom layer.
  • Layer the deli ham slices over the meat mixture, followed by a layer of Swiss cheese. If you’re using shredded Swiss cheese, spread it evenly over the ham.
  • Top with the remaining meat mixture, pressing it down to fully cover the cheese and ham layers.

4. Bake the Meatloaf:

  • Place the loaf pan in the preheated oven and bake for 40-45 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  • While the meatloaf is baking, prepare the glaze.

5. Make the Glaze:

  • In a small bowl, whisk together the Dijon mustard, honey, and mayonnaise (if using) until smooth and well combined. Set aside.

6. Glaze and Finish Baking:

  • After 40-45 minutes of baking, remove the meatloaf from the oven. Brush the top of the meatloaf with the honey Dijon glaze and return it to the oven for an additional 5-10 minutes, until the glaze is slightly caramelized and bubbly.

7. Serve:

  • Once done, remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.
  • Serve with additional glaze on the side, and enjoy with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad
