Pat the steak cubes dry with paper towels. This will help get a nice sear on the steak.
Season the steak cubes generously with salt and pepper on all sides.
2. Cook the Steak Bites:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Once the skillet is hot, add the steak cubes in a single layer. Avoid overcrowding the pan; you may need to do this in batches if necessary.
Sear the steak for 2-3 minutes per side for medium-rare (or longer if you prefer more doneness). Remove the steak from the skillet and set aside.
3. Cook the Mushrooms:
In the same skillet, add the remaining 1 tablespoon of olive oil and sliced mushrooms. Cook over medium heat until the mushrooms are softened and browned, about 5-6 minutes.
Add the minced garlic and fresh thyme (if using), cooking for another 1-2 minutes until the garlic is fragrant.
4. Combine the Steak and Mushrooms:
Return the cooked steak cubes to the skillet with the mushrooms.
Add 2 tablespoons of butter and toss everything together until the butter is melted and the steak bites are well coated.
5. Serve:
Garnish with fresh parsley (if desired) and serve immediately. These buttered steak bites with mushrooms are great on their own or paired with mashed potatoes, rice, or a simple salad.
