Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish with cooking spray or butter.
2. Prepare the Casserole Mixture:
In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, 1 cup of shredded cheddar cheese, cooked rice, and thawed broccoli.
Add garlic powder, onion powder, and chicken broth. Stir until everything is well combined.
Season with salt and pepper to taste.
3. Assemble the Casserole:
Pour the chicken mixture into the prepared 9×13-inch baking dish. Spread it out evenly.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the casserole.
4. Add the Topping (Optional):
If you’re using a cracker or breadcrumb topping, melt the butter in a small bowl and stir in the crushed crackers or breadcrumbs. Sprinkle this mixture evenly over the top of the casserole for a crispy, golden topping.
5. Bake the Casserole:
Bake in the preheated oven for 30-35 minutes, or until the casserole is hot and bubbly, and the cheese on top is melted and golden brown.
6. Serve:
Allow the casserole to cool for a few minutes before serving. It’s delicious on its own or served with a side salad or garlic bread.
