Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix the Dough:
In a large mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Mix well until smooth and creamy.
If you like extra crunch, fold in some chopped peanuts or chocolate chips at this point.
3. Shape the Cookies:
Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheet, leaving space between each cookie.
Gently flatten each ball with a fork, making a criss-cross pattern on top.
4. Bake:
Bake for 8-10 minutes, or until the edges are lightly golden brown. The cookies will firm up as they cool, so don’t worry if they’re a bit soft when you first take them out.
5. Cool and Serve:
Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
