If you have leftover smoked brisket, slice or chop it into smaller pieces, making it easier to fit inside the sandwich.
If you’re using BBQ sauce, toss the brisket with a small amount of sauce to add moisture and flavor (this is optional).
2. Butter the Bread:
Spread a thin, even layer of butter on one side of each slice of bread. This will give the sandwich that perfect crispy, golden crust as it grills.
3. Assemble the Sandwich:
Place one slice of cheese on the non-buttered side of one piece of bread.
Layer on the smoked brisket, making sure it’s evenly distributed.
Add the second slice of cheese on top of the brisket. If you’re using BBQ sauce, you can drizzle a little bit on top of the brisket before adding the cheese.
Top with the second slice of bread, buttered side facing out.
4. Grill the Sandwich:
Heat a large skillet or griddle over medium heat.
Place the sandwich in the skillet and cook for 3-4 minutes, pressing gently with a spatula, until the bottom is golden brown and crispy.
Flip the sandwich and cook the other side for another 3-4 minutes, until both sides are golden brown and the cheese has fully melted.
5. Serve:
Remove the sandwich from the skillet and let it cool for a minute before slicing it in half.
Optionally, serve with pickled jalapeños, onions, or extra BBQ sauce on the side for dipping.
