If you’re using baby carrots, you can leave them whole.
If using regular carrots, peel and cut them into evenly sized sticks or rounds, ensuring they are all roughly the same size for even roasting.
3. Make the honey garlic butter sauce:
In a small bowl, combine the melted butter, honey, minced garlic, olive oil, salt, pepper, and dried thyme (if using). Stir until well combined.
4. Coat the carrots:
Place the carrots on a baking sheet in a single layer.
Drizzle the honey garlic butter mixture over the carrots. Toss them to ensure they are evenly coated.
5. Roast the carrots:
Roast the carrots in the preheated oven for about 25-30 minutes, or until they are tender and caramelized, stirring halfway through for even cooking. If you want them extra caramelized, you can roast them for an additional 5-10 minutes, but keep an eye on them to prevent burning.
6. Garnish and serve:
Once roasted, remove the carrots from the oven. Garnish with freshly chopped parsley if desired.
Serve warm as a side dish with your favorite main course.
