Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef tips and cook until browned on all sides (about 5-7 minutes). Don’t crowd the beef, so you might need to work in batches.
Remove the beef from the skillet and set it aside.

In the same skillet, add the chopped onion and cook until softened, about 4-5 minutes.
Add the minced garlic and cook for another 30 seconds until fragrant.
3. Make the Gravy:
Return the browned beef to the skillet. Sprinkle the flour over the beef (if using) and stir to coat. This will help thicken the sauce as it cooks.
Add the beef broth, Worcestershire sauce, soy sauce, thyme, paprika, salt, and pepper. Stir to combine and bring the mixture to a simmer.
Reduce the heat to low and let the beef simmer gently for 45-60 minutes, or until the beef is tender and the gravy has thickened. If the sauce gets too thick, add more beef broth or water to reach your desired consistency.
4. Cook the Noodles:
While the beef is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
5. Finish the Dish:
Once the beef is tender and the sauce is thickened, stir in the butter for extra richness (optional).
Taste and adjust the seasoning with more salt or pepper, if necessary.
6. Serve:
Serve the beef tips and gravy over a bed of cooked egg noodles.
