Melt In Your Mouth Caesar Chicken

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Chicken:
    • If the chicken breasts are thick, you can slice them in half horizontally to make them thinner and ensure they cook evenly.
    • Season the chicken breasts with salt and pepper on both sides.
  3. Make the Caesar Coating:
    • In a bowl, combine the Caesar dressing, mayonnaise, Parmesan cheese, garlic powder, and onion powder. Mix until smooth and well-combined.
  4. Coat the Chicken:
    • Coat each chicken breast with a generous amount of the Caesar dressing mixture, making sure to cover the entire surface. You can use a brush or just spread it with a spoon.
  5. Prepare the Crust:
    • In another bowl, combine the breadcrumbs and the remaining Parmesan cheese.
    • Press each chicken breast, dressing side down, into the breadcrumb mixture, ensuring it’s evenly coated.
  6. Sear the Chicken:
    • Heat the olive oil in a large oven-safe skillet over medium-high heat.
    • Once the oil is hot, add the chicken breasts and sear them for about 2-3 minutes per side, or until golden brown. This step helps lock in moisture.
  7. Bake the Chicken:
    • After searing, transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
    • If you prefer an extra crispy topping, broil the chicken for the last 2-3 minutes of baking, keeping a close eye to prevent burning.
  8. Serve:
    • Remove the chicken from the oven and let it rest for a few minutes before serving.
    • Serve the Melt In Your Mouth Caesar Chicken with a side of roasted vegetables, mashed potatoes, or a simple green salad.
