Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spatula, until browned and cooked through (about 5-7 minutes).
Drain any excess fat, then add the taco seasoning and water. Stir to combine and simmer for 3-4 minutes, or until the beef mixture thickens and is well-coated with the seasoning.
Add the Nacho Cheese:
Stir in the nacho cheese sauce into the cooked ground beef mixture. Stir until the beef is well-coated and the cheese is melted into the beef. Let it simmer for another 2-3 minutes to ensure everything is heated through and creamy.
Prepare the Wraps:
While the beef mixture is simmering, warm the tortillas by heating them in a dry skillet for 30-60 seconds on each side, or microwaving them for 10-15 seconds. This will make them more pliable for wrapping.
Assemble the Wraps:
Spoon a generous amount of the nacho cheese beef mixture onto the center of each tortilla.
Top with shredded lettuce, diced tomatoes, onions, jalapeños, and any other toppings you like. For extra cheesiness, sprinkle some shredded cheddar on top of the beef mixture.
Wrap and Serve:
Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a wrap.
Slice in half, if desired, and serve with sour cream and salsa on the side.
