Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or butter a 9×13-inch baking dish.
Prepare the Apple Filling:
In a large bowl, toss the sliced apples with sugar, cinnamon, and lemon juice until they are evenly coated.
Spread the apple mixture evenly in the prepared baking dish.
Dot with small pieces of butter scattered across the top.
Make the Cobbler Batter:
In a medium bowl, whisk together the flour, baking powder, cinnamon, salt, and sugar.
Add the milk, melted butter, and vanilla extract, and stir until smooth.
Pour the batter over the apple mixture in the baking dish, spreading it out as evenly as possible (don’t worry if the apples peek through—it’ll work out).
Add the Snickerdoodle Topping:
In a small bowl, combine the sugar and cinnamon for the topping.
Sprinkle this mixture evenly over the top of the batter.
Bake the Cobbler:
Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. The apples should be tender and bubbling around the edges.
Serve: Let the cobbler cool slightly before serving. It’s perfect with a scoop of vanilla ice cream or a dollop of whipped cream.
